I'm the same way as your dad lol, ever since I got my S6 edge, I don't think I'll ever want to go back to a normal screen, the edge doesn't really add much in terms of functionality but it's a joy to use and gives it such a unique feel. Ever since the S6, Samsung have focused on making some appealing designs which is definitely for the best, S4 felt like a toy phone in the hand and the S5 just looked plain ugly.
